Maida is a refined wheat flour made by milling wheat grains and removing the bran and germ, leaving behind the starchy endosperm. It has a fine, white texture and is widely used in Indian and international cuisines for preparing items such as chapatis, parottas, puff pastries, cakes, biscuits, breads, noodles, and deep-fried snacks like samosas and puris.

Because of its high gluten content, Maida provides elasticity and structure, making it ideal for baking and dough-based recipes. However, it is low in fiber and nutrients compared to whole wheat flour, as the refining process removes much of the grain’s natural nutrition.
